One of Eryx's pastimes is being in the kitchen, so I want to start sharing some of his recipes with you guys.
Below is a recipe for Eryx's signature Caesar Salad, the one he made for Verena in Chapter 18
Eryx is not only a powerful mafia leader but enjoys cooking. He has so many qualities about him, that I will showcase over time in this story
Ingredients
For the Dressing:
2 large egg yolks (or 1/4 cup mayonnaise as a substitute)2 cloves garlic, minced2 anchovy fillets, finely chopped (or 1 tablespoon anchovy paste)1 tablespoon Dijon mustard1 tablespoon lemon juice (about half a lemon)1 teaspoon Worcestershire sauce1/2 cup grated Parmesan cheese1/2 cup extra-virgin olive oilSalt and freshly ground black pepper, to taste
For the Croutons:
4 slices of crusty bread (like baguette or sourdough), cut into cubes2 tablespoons extra-virgin olive oil1/2 teaspoon garlic powder1/2 teaspoon dried oregano (optional)Salt, to taste
For the Salad:
1 large head of romaine lettuce, washed and dried1/4 cup shaved Parmesan cheese (for garnish)Instructions
1. Make the Dressing:
In a medium bowl, whisk together the egg yolks, minced garlic, anchovy fillets, Dijon mustard, lemon juice, and Worcestershire sauce.Slowly drizzle in the olive oil while whisking continuously to emulsify the dressing.Stir in the grated Parmesan cheese and season with salt and freshly ground black pepper to taste. Adjust the seasoning as needed. If you prefer a smoother dressing, you can blend it in a food processor or blender.
2. Make the Croutons:
Preheat your oven to 375°F (190°C).In a large bowl, toss the bread cubes with olive oil, garlic powder, dried oregano (if using), and a pinch of salt.Spread the bread cubes in a single layer on a baking sheet.Bake for 10-15 minutes, or until the croutons are golden brown and crisp. Stir halfway through to ensure even toasting.Let the croutons cool before using them.
3. Assemble the Salad:
Tear the romaine lettuce into bite-sized pieces and place them in a large salad bowl.Add the croutons and shaved Parmesan cheese.Drizzle with the Caesar dressing and toss gently to coat the lettuce evenly.
4. Serve:
Serve immediately, with extra Parmesan cheese and freshly ground black pepper on top if desired.
